Italian Meringue Pie Topping

Ingredients

  • 2 egg whites
  • 1/2 cup powdered sugar
  • 3 tablespoons cornstarch

Method

  1. 1 Ensure bowl is grease-free. Beat egg whites until stiff peaks form.
  2. 2 Sift powdered sugar and cornstarch together to thoroughly mix.
  3. 3 Sprinkle sugar mixture over beaten whites. Gently cut down through center and fold over.
  4. 4 Turn bowl halfway and repeat folding until just combined. Do not overmix.
  5. 5 Spread over hot pie filling. Sprinkle with granulated sugar.
  6. 6 Bake at 350°F until browned. Turn off oven, crack door, and let cool inside to prevent shrinking.
