Italian Meringue Pie Topping
Ingredients
- 2 egg whites
- 1/2 cup powdered sugar
- 3 tablespoons cornstarch
Method
- 1 Ensure bowl is grease-free. Beat egg whites until stiff peaks form.
- 2 Sift powdered sugar and cornstarch together to thoroughly mix.
- 3 Sprinkle sugar mixture over beaten whites. Gently cut down through center and fold over.
- 4 Turn bowl halfway and repeat folding until just combined. Do not overmix.
- 5 Spread over hot pie filling. Sprinkle with granulated sugar.
- 6 Bake at 350°F until browned. Turn off oven, crack door, and let cool inside to prevent shrinking.
