Italian Meringue Ice Cream
Ingredients
- 3 egg whites
- 1/2 cup sugar
- 1/2 cup water
- 1 tsp vanilla extract
- 1 pint heavy cream
Method
- 1 Whip egg whites to stiff peaks.
- 2 Boil sugar and water to soft-ball stage (235°F).
- 3 Slowly pour hot syrup into egg whites, beating constantly.
- 4 Stir in vanilla once meringue cools.
- 5 Fold in whipped cream.
- 6 Mold and freeze in ice and salt for 4 hours.
