Italian Meringue Ice Cream

Ingredients

  • 3 egg whites
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 tsp vanilla extract
  • 1 pint heavy cream

Method

  1. 1 Whip egg whites to stiff peaks.
  2. 2 Boil sugar and water to soft-ball stage (235°F).
  3. 3 Slowly pour hot syrup into egg whites, beating constantly.
  4. 4 Stir in vanilla once meringue cools.
  5. 5 Fold in whipped cream.
  6. 6 Mold and freeze in ice and salt for 4 hours.
