Italian Herb Turkey And Vegetable Stew
Ingredients
- 1/2 cup vegetable oil
- 1 onion, chopped
- 4 cloves garlic, finely chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 medium potato, chopped
- 2 cups diced tomatoes (14.5 oz can)
- 2 cups water
- cooked turkey, chopped
- salt and pepper to taste
- Italian seasoning or fresh herbs
Method
- 1 Heat oil in a medium saucepan over medium heat.
- 2 Add onion, garlic, carrots, and celery; stir for 2 minutes.
- 3 Add potatoes, tomatoes, and water. Bring to a boil.
- 4 Lower heat and simmer for 30 minutes until vegetables are tender.
- 5 Add turkey and cook for 5 more minutes until heated through.
- 6 Season with salt, pepper, and Italian seasoning before serving.
