Italian Dressing Potato Salad
Ingredients
- 1/2 lb small red potatoes, quartered
- 1 1/2 teaspoons light Italian dressing
- 1 tablespoon spicy brown mustard
- 3/4 teaspoon chopped fresh parsley
- 1/4 teaspoon garlic salt
- 1/2 teaspoon ground black pepper
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- sliced green onion
Method
- 1 Cook potatoes in boiling water over high heat until tender, about 10 minutes.
- 2 Drain well and let cool.
- 3 Place potatoes in a medium bowl and set aside.
- 4 In a small bowl, combine dressing, mustard, parsley, and seasonings.
- 5 Pour mixture over potatoes and toss well.
- 6 Carefully stir in bell peppers and green onions.
- 7 Cover and chill until ready to serve.
