Irish Potato And Parsley Mash
Ingredients
- 10-12 good-sized potatoes
- 1 large bunch parsley, washed and drained
- 1 pinch baking soda
- 1 onion, chopped fine
- Salt and pepper to taste
- 1/2 cup hot milk
- 1 lump butter, melted
- Butter for serving
Method
- 1 Peel and boil potatoes in salted water. Add parsley and baking soda; cook for 10-15 minutes until tender.
- 2 Remove parsley, drain well, and chop finely, discarding stems.
- 3 Place cooked potatoes at the back of the stove with a cloth and lid to keep warm. Mash them thoroughly.
- 4 Stir in chopped onions, parsley, salt, pepper, hot milk, and melted butter. Mix well.
- 5 Serve immediately, topping each portion with a small pat of butter.
