Irish Mashed Potato Scones
Ingredients
- 3 cups mashed potatoes
- 3 cups sifted flour
- 2 teaspoons salt
- 2 level teaspoons baking powder
- 3 level teaspoons shortening
- 1/2 cup milk
- 1 egg
Method
- 1 Combine mashed potatoes, flour, salt, baking powder, and shortening in a bowl.
- 2 Beat milk and egg together. Use about two-thirds of this mixture to form a dough.
- 3 Knead the dough until smooth, then divide into four parts.
- 4 Pat or roll each part into a saucer shape. Make two cuts to form a cross, dividing each into four pieces.
- 5 Brush with remaining egg and milk mixture. Bake in a hot oven (425°F) for 18 minutes.
