Irish Mashed Potato Scones

  • 3 cups mashed potatoes
  • 3 cups sifted flour
  • 2 teaspoons salt
  • 2 level teaspoons baking powder
  • 3 level teaspoons shortening
  • 1/2 cup milk
  • 1 egg

Method

  1. 1 Combine mashed potatoes, flour, salt, baking powder, and shortening in a bowl.
  2. 2 Beat milk and egg together. Use about two-thirds of this mixture to form a dough.
  3. 3 Knead the dough until smooth, then divide into four parts.
  4. 4 Pat or roll each part into a saucer shape. Make two cuts to form a cross, dividing each into four pieces.
  5. 5 Brush with remaining egg and milk mixture. Bake in a hot oven (425°F) for 18 minutes.
