Individual Berry Shortcakes
Ingredients
- 3 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg
- 1 cup cold water
- Granulated sugar, for sprinkling
- Sweetened berries
- Sweetened whipped cream
Method
- 1 Preheat oven to 425°F. Sift flour, baking powder, and salt three times into a bowl.
- 2 Cut in cold butter until the mixture resembles coarse meal.
- 3 Beat the egg lightly, then mix in the cold water.
- 4 Pour the liquid into the flour mixture and stir just until combined.
- 5 Divide dough into two greased pie pans or muffin cups. Sprinkle tops with sugar.
- 6 Bake until golden. Split warm cakes, fill with sweetened berries, and top with whipped cream.
