  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg
  • 1 cup cold water
  • Granulated sugar, for sprinkling
  • Sweetened berries
  • Sweetened whipped cream

Method

  1. 1 Preheat oven to 425°F. Sift flour, baking powder, and salt three times into a bowl.
  2. 2 Cut in cold butter until the mixture resembles coarse meal.
  3. 3 Beat the egg lightly, then mix in the cold water.
  4. 4 Pour the liquid into the flour mixture and stir just until combined.
  5. 5 Divide dough into two greased pie pans or muffin cups. Sprinkle tops with sugar.
  6. 6 Bake until golden. Split warm cakes, fill with sweetened berries, and top with whipped cream.
