Iced Marsala Zabaglione With Sponge Cakes

Ingredients

  • 10 egg yolks
  • 3 tablespoons granulated sugar
  • ¾ cup Marsala wine
  • ½ vanilla bean stick
  • 1 small piece whole cinnamon
  • Peel of ½ lemon, sliced
  • 1 tablespoon Maraschino liqueur
  • 1 tablespoon rum
  • Ice
  • Sponge cakes or iced wafers for serving

Method

  1. 1 In a heatproof bowl, whisk egg yolks, sugar, and Marsala. Add vanilla stick, cinnamon, and lemon peel.
  2. 2 Whisk over a slow fire until nearly boiling and frothy. Remove from heat and discard spices.
  3. 3 Whisk vigorously for 1-2 minutes away from heat. Stir in Maraschino and rum.
  4. 4 Pour into a serving dish and place on ice to chill. Serve with sponge cakes or wafers.
