Iced Marsala Zabaglione With Sponge Cakes
Ingredients
- 10 egg yolks
- 3 tablespoons granulated sugar
- ¾ cup Marsala wine
- ½ vanilla bean stick
- 1 small piece whole cinnamon
- Peel of ½ lemon, sliced
- 1 tablespoon Maraschino liqueur
- 1 tablespoon rum
- Ice
- Sponge cakes or iced wafers for serving
Method
- 1 In a heatproof bowl, whisk egg yolks, sugar, and Marsala. Add vanilla stick, cinnamon, and lemon peel.
- 2 Whisk over a slow fire until nearly boiling and frothy. Remove from heat and discard spices.
- 3 Whisk vigorously for 1-2 minutes away from heat. Stir in Maraschino and rum.
- 4 Pour into a serving dish and place on ice to chill. Serve with sponge cakes or wafers.
