Huckleberry Cake With Custard Sauce
Ingredients
- 3/4 cup sugar
- 1 egg
- 4 tablespoons shortening
- 2 cups flour
- 4 teaspoons baking powder
- 3/4 cup water
- 2 cups huckleberries
- 1/2 cup cornstarch
- 1 cup brown sugar
- 1/2 teaspoon nutmeg
- custard sauce (for serving)
Method
- 1 Mix sugar, egg, shortening, flour, baking powder, and water in a bowl.
- 2 Pour batter into a greased oblong pan and bake at 350°F for 20 minutes.
- 3 Combine huckleberries, cornstarch, brown sugar, and nutmeg in a saucepan.
- 4 Stir to dissolve, bring to a boil, and cook slowly for 5 minutes. Cool.
- 5 Cool the cake, split it open, fill with the berry mixture, and serve with custard sauce.
