Hot Water Ginger Muffins
Ingredients
- 1 cup molasses
- 1 cup boiling water
- 2 1/2 cups flour
- 1 1/8 teaspoons baking soda
- 1 1/2 teaspoons ginger
- 1/2 teaspoon salt
- 1/2 cup fat
Method
- 1 Sift the dry ingredients (flour, soda, ginger, salt) together into a bowl.
- 2 In a separate pot or bowl, mix the fat, molasses, and boiling water until the fat is melted and combined.
- 3 Pour the wet mixture into the dry ingredients and beat briskly for a few minutes until smooth.
- 4 Pour the batter into greased muffin pans.
- 5 Bake in a moderate oven (350°F) for 20 to 30 minutes.
