Hot Water Ginger Muffins

Ingredients

  • 1 cup molasses
  • 1 cup boiling water
  • 2 1/2 cups flour
  • 1 1/8 teaspoons baking soda
  • 1 1/2 teaspoons ginger
  • 1/2 teaspoon salt
  • 1/2 cup fat

Method

  1. 1 Sift the dry ingredients (flour, soda, ginger, salt) together into a bowl.
  2. 2 In a separate pot or bowl, mix the fat, molasses, and boiling water until the fat is melted and combined.
  3. 3 Pour the wet mixture into the dry ingredients and beat briskly for a few minutes until smooth.
  4. 4 Pour the batter into greased muffin pans.
  5. 5 Bake in a moderate oven (350°F) for 20 to 30 minutes.
