Hot Vinegar Pickled Gherkins

Ingredients

  • 4-inch long gherkins (about 1 inch diameter)
  • 1/4 lb salt
  • 1 quart water
  • hot vinegar
  • fresh vinegar for final pickle

Method

  1. 1 Place gherkins in unglazed stone pans. Cover with brine made of 1/4 lb salt to 1 quart water. Cover tightly and set near heat for 2-3 days until they begin to turn yellow.
  2. 2 Drain the brine. Cover the gherkins with hot vinegar. Return to heat and keep hot for 8-10 days until they turn green.
  3. 3 Pour off the vinegar used for greening. Cover the gherkins with fresh vinegar. Seal with a bung, bladder, and leather.
