Hot Syrup Italian Meringue Sponge
Ingredients
- 1 cup sugar
- 1 cup water
- 3 eggs, separated
- 1 cup flour
- ½ teaspoon salt
- 2 teaspoons baking powder
- 1/8 cup cold water
- 1 teaspoon vanilla extract
Method
- 1 Boil sugar and 1 cup water until syrup spins a thread.
- 2 Slowly add hot syrup to stiffly beaten egg whites, beating until mixture is cold.
- 3 Sift flour, salt, and baking powder together three times.
- 4 Beat egg yolks until thick, then alternately add flour mixture and yolks to the egg white mixture, stirring after each addition.
- 5 Mix in 1/8 cup cold water and vanilla extract lightly.
- 6 Bake in an ungreased tube pan at 350°F for about one hour, or in a shallow tin for 35 minutes.
