Hot Syrup Italian Meringue Sponge

Ingredients

  • 1 cup sugar
  • 1 cup water
  • 3 eggs, separated
  • 1 cup flour
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • 1/8 cup cold water
  • 1 teaspoon vanilla extract

Method

  1. 1 Boil sugar and 1 cup water until syrup spins a thread.
  2. 2 Slowly add hot syrup to stiffly beaten egg whites, beating until mixture is cold.
  3. 3 Sift flour, salt, and baking powder together three times.
  4. 4 Beat egg yolks until thick, then alternately add flour mixture and yolks to the egg white mixture, stirring after each addition.
  5. 5 Mix in 1/8 cup cold water and vanilla extract lightly.
  6. 6 Bake in an ungreased tube pan at 350°F for about one hour, or in a shallow tin for 35 minutes.
