Hot Milk Sponge Cake
Ingredients
- 2 eggs
- 1 cup sugar
- 6 tablespoons hot milk
- 1 teaspoon vanilla or lemon extract
- 1 cup flour
- 1/8 teaspoon salt
- 1½ teaspoons baking powder
Method
- 1 Beat egg yolks until thick, then slowly add half the sugar while beating continually.
- 2 Add hot milk, the remaining sugar, and egg whites beaten until stiff. Mix in flavoring.
- 3 Fold in flour, salt, and baking powder that have been sifted together.
- 4 Bake in an ungreased tube pan in a 350°F oven for about 25 minutes.
