Hot Milk Sponge Cake

Ingredients

  • 2 eggs
  • 1 cup sugar
  • 6 tablespoons hot milk
  • 1 teaspoon vanilla or lemon extract
  • 1 cup flour
  • 1/8 teaspoon salt
  • 1½ teaspoons baking powder

Method

  1. 1 Beat egg yolks until thick, then slowly add half the sugar while beating continually.
  2. 2 Add hot milk, the remaining sugar, and egg whites beaten until stiff. Mix in flavoring.
  3. 3 Fold in flour, salt, and baking powder that have been sifted together.
  4. 4 Bake in an ungreased tube pan in a 350°F oven for about 25 minutes.
