Horseradish Sauce For Fish
Ingredients
- 1 cup beef broth
- 1 ½ tablespoons heavy cream
- 1 small onion, finely sliced
- 1 medium stick fresh horseradish, scraped
- 7-8 peppercorns
- 3-4 whole cloves
- 2 anchovies
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
Method
- 1 In a saucepan, melt butter with flour to make a roux.
- 2 Add beef broth, anchovies, peppercorns, and cloves. Simmer.
- 3 Stir in sliced onion and scraped horseradish. Cook until tender.
- 4 Remove from heat and stir in cream. Season to taste.
