Horseradish Cream Salt Beef Sandwiches

Ingredients

  • ½ cup heavy cream
  • 4 tablespoons freshly grated horseradish
  • 1 egg yolk
  • 1/8 teaspoon salt
  • Thin slices of cold boiled salt beef
  • Thin slices of bread
  • Butter

Method

  1. 1 Whip the heavy cream until very stiff and set aside.
  2. 2 In a bowl, mix the horseradish, egg yolk, and salt. Gently fold in the whipped cream to create a sauce.
  3. 3 Butter slices of bread. Layer with salt beef, a thin spread of the horseradish sauce, and another buttered bread slice.
  4. 4 Press sandwiches together, trim the crusts, and cut into triangles to serve.
