Horseradish Cream Salt Beef Sandwiches
Ingredients
- ½ cup heavy cream
- 4 tablespoons freshly grated horseradish
- 1 egg yolk
- 1/8 teaspoon salt
- Thin slices of cold boiled salt beef
- Thin slices of bread
- Butter
Method
- 1 Whip the heavy cream until very stiff and set aside.
- 2 In a bowl, mix the horseradish, egg yolk, and salt. Gently fold in the whipped cream to create a sauce.
- 3 Butter slices of bread. Layer with salt beef, a thin spread of the horseradish sauce, and another buttered bread slice.
- 4 Press sandwiches together, trim the crusts, and cut into triangles to serve.
