Honey Spice Cake With Nuts And Raisins
Ingredients
- 1 cup honey
- 1 cup brown sugar
- 2 egg yolks
- 9 tablespoons shortening
- 3/4 cup sour milk
- 1 1/2 teaspoons baking soda
- 4 cups flour
- 2 teaspoons cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon cloves
- 1/2 teaspoon nutmeg
- 1 cup finely chopped raisins
- 1 cup finely chopped nuts
- 1 tablespoon baking powder
- 2 egg whites
- Butter cream icing
Method
- 1 In a mixing bowl, cream together honey, brown sugar, egg yolks, and shortening.
- 2 Dissolve baking soda in sour milk, then add to the creamed mixture.
- 3 Mix in flour, cinnamon, allspice, cloves, nutmeg, raisins, nuts, and baking powder until thoroughly combined.
- 4 Fold in stiffly beaten egg whites.
- 5 Pour into a well-greased and floured pan and bake in a moderate oven (350°F) for 40 minutes.
- 6 Ice with butter cream icing.
