Honey Orange Glazed Salmon
Ingredients
- 1 pound salmon fillets, patted dry
- 2 tablespoons vegetable oil
- 1 red onion, chopped
- 1 cup baby carrots or sweet potato
- 1/4 cup parsley, chopped
- 1 cup orange juice, divided
- 1 tablespoon honey
- Salt and pepper to taste
- Orange or lemon wedges for garnish (optional)
Method
- 1 Preheat oven to 400°F. Heat oil in an oven-safe skillet over medium-high heat.
- 2 Add onion, carrots, parsley, and ½ cup orange juice to the skillet. Cook for 5-8 minutes.
- 3 Mix remaining ½ cup orange juice with honey in a small bowl.
- 4 Place salmon fillets in the center of the skillet. Season with salt and pepper, then pour the orange juice mixture over the top.
- 5 Bake for 16-18 minutes until fish is flaky. Garnish with citrus wedges if desired.
