Honey Orange Glazed Salmon

Ingredients

  • 1 pound salmon fillets, patted dry
  • 2 tablespoons vegetable oil
  • 1 red onion, chopped
  • 1 cup baby carrots or sweet potato
  • 1/4 cup parsley, chopped
  • 1 cup orange juice, divided
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Orange or lemon wedges for garnish (optional)

Method

  1. 1 Preheat oven to 400°F. Heat oil in an oven-safe skillet over medium-high heat.
  2. 2 Add onion, carrots, parsley, and ½ cup orange juice to the skillet. Cook for 5-8 minutes.
  3. 3 Mix remaining ½ cup orange juice with honey in a small bowl.
  4. 4 Place salmon fillets in the center of the skillet. Season with salt and pepper, then pour the orange juice mixture over the top.
  5. 5 Bake for 16-18 minutes until fish is flaky. Garnish with citrus wedges if desired.
