Honey Nut And Chocolate Panforte
Ingredients
- 1/2 lb honey
- Almonds, blanched and halved or quartered
- Filberts, blanched and halved or quartered
- Candied lemon peel
- Pepper
- Ground cinnamon
- 1/4 lb grated chocolate
- 1 tbsp corn flour
- 2 tbsp ground almonds
- Large wafers
- Powdered sugar
Method
- 1 Boil 1/2 lb honey in a copper vessel.
- 2 Add blanched almonds and filberts (halved/quartered and slightly browned), candied lemon peel, a dust of pepper, cinnamon, and 1/4 lb grated chocolate. Mix well.
- 3 Gradually add 1 tbsp corn flour and 2 tbsp ground almonds to thicken the mixture.
- 4 Remove from heat, spread mixture on large wafers to 1-inch thickness. Garnish with halved almonds, powdered sugar, and cinnamon.
- 5 Bake in a very slow oven (300°F) for 1 hour.
