Honey Nut And Chocolate Panforte

Ingredients

  • 1/2 lb honey
  • Almonds, blanched and halved or quartered
  • Filberts, blanched and halved or quartered
  • Candied lemon peel
  • Pepper
  • Ground cinnamon
  • 1/4 lb grated chocolate
  • 1 tbsp corn flour
  • 2 tbsp ground almonds
  • Large wafers
  • Powdered sugar

Method

  1. 1 Boil 1/2 lb honey in a copper vessel.
  2. 2 Add blanched almonds and filberts (halved/quartered and slightly browned), candied lemon peel, a dust of pepper, cinnamon, and 1/4 lb grated chocolate. Mix well.
  3. 3 Gradually add 1 tbsp corn flour and 2 tbsp ground almonds to thicken the mixture.
  4. 4 Remove from heat, spread mixture on large wafers to 1-inch thickness. Garnish with halved almonds, powdered sugar, and cinnamon.
  5. 5 Bake in a very slow oven (300°F) for 1 hour.
