Honey Lemon Drop Cakes

Ingredients

  • 1/3 cup shortening
  • 1/4 cup sugar
  • 1/2 cup honey
  • 1 egg
  • 1/2 tablespoon lemon juice
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder

Method

  1. 1 Cream shortening and sugar slowly. Add honey, beaten egg yolk, and lemon juice; mix well.
  2. 2 Sift flour and baking powder together, then fold into the wet mixture. Fold in beaten egg white.
  3. 3 Drop batter from a spoon onto a greased baking sheet.
  4. 4 Bake in a hot oven (425°F) for 10 to 15 minutes.
