Honey Lemon Drop Cakes
Ingredients
- 1/3 cup shortening
- 1/4 cup sugar
- 1/2 cup honey
- 1 egg
- 1/2 tablespoon lemon juice
- 1 1/2 cups flour
- 1 1/2 teaspoons baking powder
Method
- 1 Cream shortening and sugar slowly. Add honey, beaten egg yolk, and lemon juice; mix well.
- 2 Sift flour and baking powder together, then fold into the wet mixture. Fold in beaten egg white.
- 3 Drop batter from a spoon onto a greased baking sheet.
- 4 Bake in a hot oven (425°F) for 10 to 15 minutes.
