Ingredients

  • 1 cup brown sugar
  • 2 tablespoons Crisco
  • 1/2 cup cream
  • 1/4 teaspoon salt
  • Pinch cream of tartar
  • 1 teaspoon lemon extract

Method

  1. 1 Combine Crisco, salt, honey, cream, and sugar in a saucepan.
  2. 2 Heat over low heat, stirring until dissolved, then add cream of tartar.
  3. 3 Boil until the mixture forms a hard ball in cold water or reaches 252°F.
  4. 4 Remove from heat, stir in lemon extract, and pour into a greased pan.
  5. 5 Score into squares while warm, let cool completely, then wrap in waxed paper.
