Honey Glazed Orange Carrots
Ingredients
- 16 oz carrots, peeled and cut into strips
- 1/4 tsp ground cinnamon
- 1 orange
- 1 tbsp honey
- 1 tbsp butter alternative spread
- 1 tbsp fresh parsley, for garnish (optional)
Method
- 1 Bring 2 cups of water to a gentle boil in a saucepan. Add carrots and cinnamon, then cook for 10 minutes until tender. Drain well.
- 2 While carrots cook, wash the orange. Squeeze the juice to remove seeds, then carefully zest the peel, avoiding the bitter white pith. Slice zest into small pieces.
- 3 Return drained carrots to the pan. Add honey, butter alternative, and orange zest. Toss to combine and serve hot.
