Hominy Cornmeal Waffles
Ingredients
- 2 cups small hominy, boiled soft
- 2 cups cornmeal
- 1 large spoonful butter
- 3 eggs
- milk, as needed
- salt to taste
Method
- 1 Boil 2 cups of small hominy until very soft.
- 2 Stir in 2 cups cornmeal, a little salt, and 1 large spoonful of butter.
- 3 Mix in 3 eggs and enough milk to form a thin batter; beat well.
- 4 Bake on a griddle or in waffle irons until golden.
