Hominy Cornmeal Waffles

Ingredients

  • 2 cups small hominy, boiled soft
  • 2 cups cornmeal
  • 1 large spoonful butter
  • 3 eggs
  • milk, as needed
  • salt to taste

Method

  1. 1 Boil 2 cups of small hominy until very soft.
  2. 2 Stir in 2 cups cornmeal, a little salt, and 1 large spoonful of butter.
  3. 3 Mix in 3 eggs and enough milk to form a thin batter; beat well.
  4. 4 Bake on a griddle or in waffle irons until golden.
