Hominy Cornmeal Griddle Cakes
Ingredients
- 2 cups fine hominy
- 2 cups white cornmeal, sifted
- 3 tablespoons butter, melted
- 1 pinch salt
- 3 eggs, well beaten
- 4 cups milk
Method
- 1 Soak the fine hominy in water overnight.
- 2 Cook the soaked hominy in a double boiler all day or until soft.
- 3 In a large bowl, combine the cooked hominy, sifted cornmeal, melted butter, salt, beaten eggs, and milk to form a thin batter.
- 4 Pour batter onto a hot griddle and cook until bubbles form, then flip and cook until golden brown.
