Hominy Cornmeal Griddle Cakes

Ingredients

  • 2 cups fine hominy
  • 2 cups white cornmeal, sifted
  • 3 tablespoons butter, melted
  • 1 pinch salt
  • 3 eggs, well beaten
  • 4 cups milk

Method

  1. 1 Soak the fine hominy in water overnight.
  2. 2 Cook the soaked hominy in a double boiler all day or until soft.
  3. 3 In a large bowl, combine the cooked hominy, sifted cornmeal, melted butter, salt, beaten eggs, and milk to form a thin batter.
  4. 4 Pour batter onto a hot griddle and cook until bubbles form, then flip and cook until golden brown.
