Hominy Corn Muffins
Ingredients
- 1 cup cold boiled hominy
- 1 cup cornmeal
- 1 pinch salt
- 1 tbsp sugar
- 1 tsp baking powder
- 1 tbsp melted butter
- 1 egg, well beaten
- 1 cup milk
Method
- 1 Mash the cold boiled hominy with the cornmeal in a bowl.
- 2 Add salt, sugar, baking powder, melted butter, beaten egg, and milk. Beat the mixture hard for five minutes.
- 3 Pour the batter into buttered gem pans.
- 4 Bake in a hot oven (425°F) for 15 to 20 minutes.
