Hominy Corn Muffins

Ingredients

  • 1 cup cold boiled hominy
  • 1 cup cornmeal
  • 1 pinch salt
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1 tbsp melted butter
  • 1 egg, well beaten
  • 1 cup milk

Method

  1. 1 Mash the cold boiled hominy with the cornmeal in a bowl.
  2. 2 Add salt, sugar, baking powder, melted butter, beaten egg, and milk. Beat the mixture hard for five minutes.
  3. 3 Pour the batter into buttered gem pans.
  4. 4 Bake in a hot oven (425°F) for 15 to 20 minutes.
