Hominy And Cornmeal Griddle Cakes

Ingredients

• 1 pint small hominy
• 1 pint corn meal
• Eggs
• Milk
• Butter

Method

1. 1 Wash 1 pint of small hominy very clean and boil until tender.
2. 2 Add 1 pint of corn meal to the cooked hominy.
3. 3 Make a batter using eggs, milk, and a piece of butter.
4. 4 Bake like batter cakes on a griddle.
5. 5 Serve with butter and molasses.
