Homemade Turkey Stock From Carcass
Ingredients
- Turkey carcass and bones
- Cold water (enough to cover)
- 1/2 cup chopped onions
- 1/2 cup diced carrots
- 1 faggot of soup herbs
Method
- 1 Remove meat from the turkey carcass, separating white and dark meat. Pick the carcass clean.
- 2 Break the bones and place them in a soup kettle. Cover with cold water.
- 3 Add 1/2 cup chopped onions, 1/2 cup diced carrots, and a faggot of soup herbs.
- 4 Bring to a boil, then cook slowly for two hours.
- 5 Strain the liquid into a bowl. Use the stock for soups, sauces, and gravies.
