Homemade Turkey Stock From Carcass

Ingredients

  • Turkey carcass and bones
  • Cold water (enough to cover)
  • 1/2 cup chopped onions
  • 1/2 cup diced carrots
  • 1 faggot of soup herbs

Method

  1. 1 Remove meat from the turkey carcass, separating white and dark meat. Pick the carcass clean.
  2. 2 Break the bones and place them in a soup kettle. Cover with cold water.
  3. 3 Add 1/2 cup chopped onions, 1/2 cup diced carrots, and a faggot of soup herbs.
  4. 4 Bring to a boil, then cook slowly for two hours.
  5. 5 Strain the liquid into a bowl. Use the stock for soups, sauces, and gravies.
