Homemade Tarragon Aioli

Ingredients

  • 3 egg yolks
  • 1/2 tsp prepared mustard
  • Salt and pepper to taste
  • 1/2 cup salad oil
  • Minced tarragon or chervil (optional)
  • Vinegar (optional)

Method

  1. 1 Pound the egg yolks in a mortar until smooth.
  2. 2 Add mustard, salt, and pepper to the yolks.
  3. 3 Slowly drizzle in the oil while stirring constantly until the mixture thickens.
  4. 4 Stir in minced herbs and vinegar if desired.
