Homemade Tarragon Aioli
Ingredients
- 3 egg yolks
- 1/2 tsp prepared mustard
- Salt and pepper to taste
- 1/2 cup salad oil
- Minced tarragon or chervil (optional)
- Vinegar (optional)
Method
- 1 Pound the egg yolks in a mortar until smooth.
- 2 Add mustard, salt, and pepper to the yolks.
- 3 Slowly drizzle in the oil while stirring constantly until the mixture thickens.
- 4 Stir in minced herbs and vinegar if desired.
