Homemade Quince Jelly

Ingredients

  • Quinces
  • Water
  • Sugar (1 pound per pint of juice)

Method

  1. 1 Wash, wipe, and cut quinces into small pieces, removing seeds carefully.
  2. 2 Place quinces and seeds in a kettle half-filled with water; cover and boil until very soft.
  3. 3 Mash the cooked quinces and strain to extract the juice.
  4. 4 Combine the juice with sugar (1 pound per pint of juice) in a clean kettle.
  5. 5 Boil the mixture until it forms a jelly.
  6. 6 Pour into tea-cups lined with brandy papers to set, if desired.
