Homemade Quince Jelly
Ingredients
- Quinces
- Water
- Sugar (1 pound per pint of juice)
Method
- 1 Wash, wipe, and cut quinces into small pieces, removing seeds carefully.
- 2 Place quinces and seeds in a kettle half-filled with water; cover and boil until very soft.
- 3 Mash the cooked quinces and strain to extract the juice.
- 4 Combine the juice with sugar (1 pound per pint of juice) in a clean kettle.
- 5 Boil the mixture until it forms a jelly.
- 6 Pour into tea-cups lined with brandy papers to set, if desired.
