Homemade Quince Jam
Ingredients
- Quinces
- Water
- Sugar (3/4 cup per cup of quince pulp)
Method
- 1 Wipe quinces, remove blossom ends, and cut into quarters. Remove seeds and cut the flesh into small pieces.
- 2 Place quinces in a preserving kettle with enough water to nearly cover them. Cook slowly until the fruit is soft.
- 3 Rub the cooked quinces through a hair sieve. Add heated sugar, using three-fourths the measure of the pulp.
- 4 Cook slowly for twenty minutes, stirring occasionally to prevent burning. Pour into tumblers to set.
