Homemade Mayonnaise With Whipped Cream

Ingredients

  • 3 egg yolks
  • 1/2 to 1 pint salad oil
  • 1/2 teaspoon vinegar
  • 1 cup heavy cream, whipped stiffly (optional)

Method

  1. 1 Place egg yolks in a clean, cold bowl and beat slightly.
  2. 2 Slowly add salad oil, drop by drop, while whisking constantly until emulsified.
  3. 3 After adding the first half pint of oil, add vinegar occasionally to prevent breaking.
  4. 4 Continue adding oil until desired consistency is reached, up to one quart.
  5. 5 Fold in stiffly whipped cream just before serving if desired.
