Homemade Mayonnaise With Whipped Cream
Ingredients
- 3 egg yolks
- 1/2 to 1 pint salad oil
- 1/2 teaspoon vinegar
- 1 cup heavy cream, whipped stiffly (optional)
Method
- 1 Place egg yolks in a clean, cold bowl and beat slightly.
- 2 Slowly add salad oil, drop by drop, while whisking constantly until emulsified.
- 3 After adding the first half pint of oil, add vinegar occasionally to prevent breaking.
- 4 Continue adding oil until desired consistency is reached, up to one quart.
- 5 Fold in stiffly whipped cream just before serving if desired.
