Homemade Lemon Sherbet

Ingredients

  • ¾ lb granulated sugar
  • 1 pint water
  • 3 good-sized lemons
  • Lemon peel pieces

Method

  1. 1 Boil sugar, water, and lemon peel pieces in an uncovered kettle for 10 minutes.
  2. 2 Let the syrup cool completely.
  3. 3 Squeeze lemons one at a time, tasting the mixture to adjust acidity.
  4. 4 Strain the mixture to remove solids.
  5. 5 Freeze in a freezer packed with salt and ice.
