  • 4.5 lbs moist sugar

Method

  1. 1 Combine the currants, raspberries, and sugar in a large pot.
  2. 2 Simmer the mixture slowly, skimming off any foam that rises to the surface.
  3. 3 Boil until the jam reaches a sufficient gel consistency.
  4. 4 Transfer the hot jam into jars and seal with brandy paper once cooled.
