Homemade Currant Paste
Ingredients
- 1 lb currants
- 1 lb 4 oz loaf sugar
- Water
Method
- 1 Wash currants, place in a preserving pan, and bruise them.
- 2 Add a little water and boil the currants to a pulp.
- 3 Press out the juice from the pulp.
- 4 For every pound of juice, add 1 lb 4 oz of sugar and boil to crack.
- 5 Remove from heat, add the currant paste, skim off scum, and pot.
