Homemade Currant Paste

Ingredients

  • 1 lb currants
  • 1 lb 4 oz loaf sugar
  • Water

Method

  1. 1 Wash currants, place in a preserving pan, and bruise them.
  2. 2 Add a little water and boil the currants to a pulp.
  3. 3 Press out the juice from the pulp.
  4. 4 For every pound of juice, add 1 lb 4 oz of sugar and boil to crack.
  5. 5 Remove from heat, add the currant paste, skim off scum, and pot.
