Homemade Apricot Raisin Marmalade
Ingredients
- 1 cup apricots
- 1½ cups cold water
- 1 cup corn syrup
- ½ cup chopped seeded raisins
- 1 teaspoon orange rind
Method
- 1 Soak apricots and raisins in the water for two hours.
- 2 Cook slowly until the fruit is very soft.
- 3 Add corn syrup and orange rind; cook slowly for about 30 minutes until slightly thickened.
- 4 Place in sterile jars or glasses and seal.
