Homemade Apricot Raisin Marmalade

Ingredients

  • 1 cup apricots
  • 1½ cups cold water
  • 1 cup corn syrup
  • ½ cup chopped seeded raisins
  • 1 teaspoon orange rind

Method

  1. 1 Soak apricots and raisins in the water for two hours.
  2. 2 Cook slowly until the fruit is very soft.
  3. 3 Add corn syrup and orange rind; cook slowly for about 30 minutes until slightly thickened.
  4. 4 Place in sterile jars or glasses and seal.
