Hollandaise Sauce
Ingredients
- 4 egg yolks
- ½ cup cold water
- 2 tbsp vinegar or lemon juice
- Salt
- Cayenne pepper
- Onion juice
- ½ cup butter, cut into small pieces
Method
- 1 Beat egg yolks with cold water and vinegar or lemon juice.
- 2 Cook mixture in a double boiler until thickened, seasoning with salt, cayenne, and onion juice.
- 3 Remove from heat and stir in butter pieces until melted. Serve immediately.
