Hollandaise Sauce

Ingredients

  • 4 egg yolks
  • ½ cup cold water
  • 2 tbsp vinegar or lemon juice
  • Salt
  • Cayenne pepper
  • Onion juice
  • ½ cup butter, cut into small pieces

Method

  1. 1 Beat egg yolks with cold water and vinegar or lemon juice.
  2. 2 Cook mixture in a double boiler until thickened, seasoning with salt, cayenne, and onion juice.
  3. 3 Remove from heat and stir in butter pieces until melted. Serve immediately.
