Hickory Nut Potato Salad With Creamy Dressing
Ingredients
- 5 tbsp melted Crisco
- 1 tsp mustard
- 1 tsp salt
- 2 tsp sugar
- 2 egg yolks
- 3/4 cup cream or milk
- 1/4 cup vinegar
- 3 cups sliced cold potatoes
- 1 cup broken hickory nut meats
- 1 tsp chopped onion
- Chopped parsley
- Cold cooked sliced beets
- Sliced lemon
- Lettuce leaves
Method
- 1 Mix sugar, salt, and mustard. Add melted Crisco and stir thoroughly.
- 2 Add well-beaten egg yolks, cream (or milk), and vinegar. If using milk, add 1 tsp flour to the dry ingredients first.
- 3 Cook the mixture in a double boiler until it thickens to the consistency of cream.
- 4 Toss sliced cold potatoes, broken hickory nuts, and chopped onion together.
- 5 Place the potato mixture on crisp lettuce leaves. Pour the warm dressing over the top.
- 6 Garnish with chopped parsley, sliced beets, and lemon slices before serving.
