Herb Roasted Beef With Gravy
Ingredients
- 1 chine, rib, loin, brisket, or fillet of beef
- Butter for basting
- Fresh or salt herbs (parsley, rosemary, thyme, sweet marjoram, sage, winter savory, or lemon) - optional
- Rosemary tops, sage leaves, parsley, thyme, sweet marjoram for sauce
- Wine vinegar
- Beef gravy
- Juice of oranges and lemons - optional
- Pepper
Method
- 1 Prepare the beef by stuffing or rubbing with chosen herbs (parsley, rosemary, thyme, sage, etc.) or leave plain. Broach or spit the meat.
- 2 Roast the beef for approximately six hours, basting frequently with butter.
- 3 For the sauce, steep fresh herbs in wine vinegar and beef gravy. Alternatively, mix gravy with orange and lemon juice, or serve with vinegar and pepper.
