Herb Ravigote Sauce

Ingredients

  • 2 egg yolks, well-beaten
  • 2 tablespoons butter
  • minced chives
  • minced chervil
  • minced tarragon
  • minced parsley

Method

  1. 1 Place egg yolks and 1 tablespoon butter in a double boiler.
  2. 2 Cook, stirring constantly, until the mixture begins to thicken.
  3. 3 Add the remaining 1 tablespoon butter and cook until creamy.
  4. 4 Remove from heat and season with minced chives, chervil, tarragon, and parsley.
