Herb Ravigote Sauce
Ingredients
- 2 egg yolks, well-beaten
- 2 tablespoons butter
- minced chives
- minced chervil
- minced tarragon
- minced parsley
Method
- 1 Place egg yolks and 1 tablespoon butter in a double boiler.
- 2 Cook, stirring constantly, until the mixture begins to thicken.
- 3 Add the remaining 1 tablespoon butter and cook until creamy.
- 4 Remove from heat and season with minced chives, chervil, tarragon, and parsley.
