Herb Potato Salad With Yogurt Dressing

  • 1/4 teaspoon salt
  • 1 pound small potatoes
  • 1/2 radish, sliced (optional)
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon onion powder
  • 3 tablespoons plain non-fat yogurt
  • 1 tablespoon reduced-calorie mayonnaise
  • 1 1/2 teaspoons prepared mustard
  • 1/2 teaspoon chopped garlic

Method

  1. 1 Scrub potatoes and cut into cubes. Place in a medium saucepan and cover with water.
  2. 2 Bring to a boil, then cover, reduce heat, and simmer for 12 minutes or until potatoes are tender. Drain.
  3. 3 In a bowl, mix yogurt, mayonnaise, mustard, salt, onion powder, and garlic to create the dressing.
