Herb Potato Salad With Yogurt Dressing
Ingredients
- 1/4 teaspoon salt
- 1 pound small potatoes
- 1/2 radish, sliced (optional)
- 1/2 teaspoon dried basil
- 1/4 teaspoon dried thyme
- 1/4 teaspoon onion powder
- 3 tablespoons plain non-fat yogurt
- 1 tablespoon reduced-calorie mayonnaise
- 1 1/2 teaspoons prepared mustard
- 1/2 teaspoon chopped garlic
Method
- 1 Scrub potatoes and cut into cubes. Place in a medium saucepan and cover with water.
- 2 Bring to a boil, then cover, reduce heat, and simmer for 12 minutes or until potatoes are tender. Drain.
- 3 In a bowl, mix yogurt, mayonnaise, mustard, salt, onion powder, and garlic to create the dressing.
- 4 Combine the hot potatoes with the dressing, radishes, basil, and thyme. Toss to coat evenly.
- 5 Serve the salad hot or allow it to cool and serve cold.
