Herb Marinated Broiled Whole Fish
Ingredients
- 1 whole mullet, bace, or bream
- 1 tbsp salad oil
- 1 tbsp wine vinegar
- Salt to taste
- Fresh rosemary sprigs
- Fresh thyme sprigs
- Fresh parsley sprigs
- Slices of orange, lemon, or barberries for garnish
Method
- 1 Clean the fish by drawing and washing it thoroughly. You may leave the scales on or remove them.
- 2 Prepare a marinade by mixing salad oil, wine vinegar, salt, rosemary, thyme, and parsley. Steep the fish in this mixture.
- 3 Heat a gridiron over soft embers. Place the fish on the gridiron and broil, basting occasionally with the steeping sauce.
- 4 Transfer the cooked fish to a warm serving dish. Pour the remaining sauce and herbs over the fish and garnish with citrus slices or barberries.
