Herb Infused Oyster Chowder
Ingredients
- 1 can oysters (with liquor)
- 1 cup water
- Salt and pepper to taste
- 1 tbsp fresh parsley, chopped
- 1 tsp fresh thyme
- 2 tbsp butter
- 1 tbsp flour
- 2 tbsp water (for thickening)
- ½ cup cream (optional)
Method
- 1 Strain the oysters, reserving the liquor. Combine the oyster liquor with an equal amount of water in a saucepan and bring to a boil.
- 2 Skim off any scum that rises. Add salt, pepper, parsley, thyme, and butter to the broth.
- 3 Mix flour with 2 tablespoons of cold water to create a smooth paste. Stir this into the boiling broth to thicken.
- 4 Add the oysters to the soup and let them scald gently for a minute. If using, stir in cream just before serving.
