Herb Infused Oyster Chowder

Ingredients

  • 1 can oysters (with liquor)
  • 1 cup water
  • Salt and pepper to taste
  • 1 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme
  • 2 tbsp butter
  • 1 tbsp flour
  • 2 tbsp water (for thickening)
  • ½ cup cream (optional)

Method

  1. 1 Strain the oysters, reserving the liquor. Combine the oyster liquor with an equal amount of water in a saucepan and bring to a boil.
  2. 2 Skim off any scum that rises. Add salt, pepper, parsley, thyme, and butter to the broth.
  3. 3 Mix flour with 2 tablespoons of cold water to create a smooth paste. Stir this into the boiling broth to thicken.
  4. 4 Add the oysters to the soup and let them scald gently for a minute. If using, stir in cream just before serving.
