Herb And Shallot Vinaigrette
Ingredients
- 1 tbsp mixed fresh herbs (thyme, sage, parsley, chervil), finely shredded
- ½ clove garlic, minced
- 2 shallots, minced
- 1 tsp mustard
- 2 tbsp salad oil
- 1 tbsp vinegar
- Juice of ½ lemon
- Salt to taste
- Pinch of cayenne pepper
- 1 anchovy fillet, minced (optional)
Method
- 1 Finely shred the fresh herbs, garlic, and shallots.
- 2 In a bowl, whisk together the mustard, oil, vinegar, and lemon juice.
- 3 Stir in the herbs, garlic, and shallots. Season with salt and cayenne.
- 4 Fold in the minced anchovy if using. Serve cold with game or veal.
