Ingredients

  • 1 tbsp mixed fresh herbs (thyme, sage, parsley, chervil), finely shredded
  • ½ clove garlic, minced
  • 2 shallots, minced
  • 1 tsp mustard
  • 2 tbsp salad oil
  • 1 tbsp vinegar
  • Juice of ½ lemon
  • Salt to taste
  • Pinch of cayenne pepper
  • 1 anchovy fillet, minced (optional)

Method

  1. 1 Finely shred the fresh herbs, garlic, and shallots.
  2. 2 In a bowl, whisk together the mustard, oil, vinegar, and lemon juice.
  3. 3 Stir in the herbs, garlic, and shallots. Season with salt and cayenne.
