Hearty Vegetable Beef Soup

Ingredients

  • 2½ lbs beef (with soup bone)
  • 3 quarts water
  • 1 tablespoon sugar
  • Salt to taste
  • A few peppercorns
  • 1 cup diced carrots
  • 1 cup diced potatoes
  • 1 cup diced celery
  • 2 tablespoons finely chopped onion
  • ½ head finely chopped cabbage
  • ½ can corn (or equivalent fresh)
  • ½ can peas (or equivalent fresh)
  • 2 tablespoons minced parsley
  • ¼ cup diced turnip and parsnip (optional)
  • ½ can tomatoes (or equivalent fresh)

Method

  1. 1 Place beef and water in a large kettle; boil for 1 hour.
  2. 2 Add sugar, salt, peppercorns, and all vegetables (except parsley).
  3. 3 Simmer until vegetables are soft.
  4. 4 Stir in minced parsley and serve.
