Hearty Vegetable Beef Soup
Ingredients
- 2½ lbs beef (with soup bone)
- 3 quarts water
- 1 tablespoon sugar
- Salt to taste
- A few peppercorns
- 1 cup diced carrots
- 1 cup diced potatoes
- 1 cup diced celery
- 2 tablespoons finely chopped onion
- ½ head finely chopped cabbage
- ½ can corn (or equivalent fresh)
- ½ can peas (or equivalent fresh)
- 2 tablespoons minced parsley
- ¼ cup diced turnip and parsnip (optional)
- ½ can tomatoes (or equivalent fresh)
Method
- 1 Place beef and water in a large kettle; boil for 1 hour.
- 2 Add sugar, salt, peppercorns, and all vegetables (except parsley).
- 3 Simmer until vegetables are soft.
- 4 Stir in minced parsley and serve.
