Hearty Vegetable Beef Noodle Soup
Ingredients
- 1 can (14.5 oz) low-sodium chicken broth
- 1/2 cup water
- 2 cups frozen mixed vegetables
- 1 can (14.5 oz) tomatoes, broken up
- 4 ounces cooked diced beef
- 1 teaspoon crushed thyme leaves
- 1 dash pepper
- 1/4 teaspoon salt
- 1 bay leaf
- 1 1/4 cups narrow uncooked noodles
Method
- 1 Heat chicken broth and water in a pot.
- 2 Add frozen vegetables, diced beef, tomatoes, thyme, pepper, salt, and bay leaf.
- 3 Bring to a boil, then reduce heat and simmer uncovered for 15 minutes.
- 4 Stir in noodles and cook until tender, about 10 minutes.
- 5 Remove bay leaf before serving.
