Hearty Vegetable Beef Noodle Soup

Ingredients

  • 1 can (14.5 oz) low-sodium chicken broth
  • 1/2 cup water
  • 2 cups frozen mixed vegetables
  • 1 can (14.5 oz) tomatoes, broken up
  • 4 ounces cooked diced beef
  • 1 teaspoon crushed thyme leaves
  • 1 dash pepper
  • 1/4 teaspoon salt
  • 1 bay leaf
  • 1 1/4 cups narrow uncooked noodles

Method

  1. 1 Heat chicken broth and water in a pot.
  2. 2 Add frozen vegetables, diced beef, tomatoes, thyme, pepper, salt, and bay leaf.
  3. 3 Bring to a boil, then reduce heat and simmer uncovered for 15 minutes.
  4. 4 Stir in noodles and cook until tender, about 10 minutes.
  5. 5 Remove bay leaf before serving.
