Hearty Veal And Vegetable Soup
Ingredients
- 4 quarts water
- 1 knuckle of veal
- 1 tablespoon salt
- 1 pod red pepper
- 1 cup cabbage, cut fine
- 2 cups potatoes, diced
- 1 carrot, minced
- 3 large onions
- 1 head celery, cut fine
Method
- 1 Place veal, water, salt, and red pepper in a large pot. Simmer for three hours, skimming as needed.
- 2 Add cabbage, potatoes, carrot, onions, and celery. Simmer until vegetables are tender.
