Hearty Root Vegetable And Beef Soup
Ingredients
- 6 potatoes
- 6 French turnips
- 6 English turnips
- 6 carrots
- 6 celery roots
- 3-4 onions
- bones of a rump of beef or 2 lbs beef
- water
- celery roots, chopped
- salt
- pepper
- herbs (optional)
- toast or fried bread for serving
Method
- 1 Peel and wash the potatoes, turnips, carrots, and celery roots. Chop them up along with the onions.
- 2 Place the chopped vegetables and beef bones (or beef) in a pot. Add enough water to cover everything.
- 3 Stew gently until the vegetables are tender enough to rub through a sieve. Strain the soup.
- 4 Return the strained soup to the pot. Add chopped celery roots and a bundle of herbs if desired.
- 5 Season with salt and pepper. Stew gently until the celery is tender, then remove the herbs.
- 6 Serve the soup hot with toast or fried bread.
