Hearty Lentil And Carrot Soup

Ingredients

  • 1 tablespoon olive oil or cooking oil
  • 3 large red, yellow, or white onions, chopped
  • 3 carrots, finely diced
  • 2 garlic cloves, minced
  • 1 pound lentils, rinsed
  • 1 (14.5 ounce) can diced tomatoes
  • 8 cups low-sodium vegetable or chicken broth
  • 1 bay leaf
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Method

  1. 1 Wash hands with soap and water. Sauté onions, carrots, red pepper flakes, and garlic in oil until soft.
  2. 2 Add tomatoes, bay leaf, salt, and pepper and stir well.
  3. 3 Add rinsed lentils and broth and simmer until lentils are soft, about 30 minutes.
  4. 4 Season with additional salt and pepper, if desired.
