Hearty Lentil And Carrot Soup
Ingredients
- 1 tablespoon olive oil or cooking oil
- 3 large red, yellow, or white onions, chopped
- 3 carrots, finely diced
- 2 garlic cloves, minced
- 1 pound lentils, rinsed
- 1 (14.5 ounce) can diced tomatoes
- 8 cups low-sodium vegetable or chicken broth
- 1 bay leaf
- 1/4 teaspoon red pepper flakes
- 1 teaspoon salt
- 1 teaspoon black pepper
Method
- 1 Wash hands with soap and water. Sauté onions, carrots, red pepper flakes, and garlic in oil until soft.
- 2 Add tomatoes, bay leaf, salt, and pepper and stir well.
- 3 Add rinsed lentils and broth and simmer until lentils are soft, about 30 minutes.
- 4 Season with additional salt and pepper, if desired.
