Hearty Beef Stock Vegetable Soup
Ingredients
- 1 cup chopped onion
- 1 cup chopped carrot
- 1 cup chopped celery
- 1 cup chopped tomatoes
- 1/2 cup chopped turnip
- 1/2 cup chopped parsnip
- 1/2 cup chopped cabbage
- butter
- 4 cups boiling water
- 4 cups beef stock
- salt
- pepper
- sugar
- minced parsley
Method
- 1 Fry the chopped onion and carrot in a little butter.
- 2 Add boiling water and beef stock to the pot.
- 3 Simmer until all vegetables are tender.
- 4 Season with salt, pepper, sugar, and minced parsley before serving.
