Hearty Beef Shin And Vegetable Soup
Ingredients
- 1 beef shin, cracked into pieces
- Water for boiling
- Potatoes, peeled and chopped
- Onions, chopped
- Turnips, chopped
- Carrots, chopped
- Cabbage, cut into pieces (optional)
- Eggs and milk (for dumplings, optional)
- Pie crust dough (for dumplings, optional)
- Thickening agent (e.g., flour or cornstarch slurry)
- Fresh parsley, chopped
- Fresh thyme
- Salt and pepper to taste
- Tomatoes, chopped (optional, if in season)
Method
- 1 Rinse the cracked beef shin through three changes of water. Place it in a large pot and cover with fresh water. Simmer for about 3 hours, skimming off any scum that rises to the surface. Keep the pot covered.
- 2 About one hour before the meat is tender, skim off all visible fat from the surface. Add the potatoes, onions, turnips, carrots, and cabbage to the pot.
- 3 Prepare dumplings by beating eggs with milk or rolling out pie crust dough. Cut into small pieces and add to the soup a few minutes before serving.
- 4 Stir in a thickening agent mixed with parsley, thyme, salt, and pepper. Add tomatoes if using. Simmer until vegetables are tender and dumplings are cooked through.
