Hearty Beef Shin And Vegetable Soup

Ingredients

  • 1 beef shin, cracked into pieces
  • Water for boiling
  • Potatoes, peeled and chopped
  • Onions, chopped
  • Turnips, chopped
  • Carrots, chopped
  • Cabbage, cut into pieces (optional)
  • Eggs and milk (for dumplings, optional)
  • Pie crust dough (for dumplings, optional)
  • Thickening agent (e.g., flour or cornstarch slurry)
  • Fresh parsley, chopped
  • Fresh thyme
  • Salt and pepper to taste
  • Tomatoes, chopped (optional, if in season)

Method

  1. 1 Rinse the cracked beef shin through three changes of water. Place it in a large pot and cover with fresh water. Simmer for about 3 hours, skimming off any scum that rises to the surface. Keep the pot covered.
  2. 2 About one hour before the meat is tender, skim off all visible fat from the surface. Add the potatoes, onions, turnips, carrots, and cabbage to the pot.
  3. 3 Prepare dumplings by beating eggs with milk or rolling out pie crust dough. Cut into small pieces and add to the soup a few minutes before serving.
  4. 4 Stir in a thickening agent mixed with parsley, thyme, salt, and pepper. Add tomatoes if using. Simmer until vegetables are tender and dumplings are cooked through.
