Hearty Beef, Pork, And Mutton Stew
Ingredients
- 1 lb beef, cut into 3x2 inch pieces
- 1 lb salt pork, cut into 3x2 inch pieces
- 1 lb mutton, cut into 3x2 inch pieces
- 2-3 carrots, cut into moderate pieces
- 1 large turnip, cut into moderate pieces
- 1 large head of celery, cut into moderate pieces
- 3-4 leeks, cut into moderate pieces
- 1 whole green cabbage, cut into quarters
- Potatoes, peeled and cut into pieces
Method
- 1 Place beef, salt pork, and mutton in a large pot. Cover with water and bring to a boil, skimming off any foam that rises.
- 2 Add carrots, turnip, celery, leeks, and cabbage to the pot. Ensure vegetables are submerged in the water.
- 3 Simmer for 3 to 4 hours until meat and vegetables are tender.
- 4 Add potatoes to the pot and cook for an additional 45 minutes until tender.
- 5 Serve the meat and vegetables on a large platter, ladling the broth into soup tureens or individual soup plates.
